For the cream cheese pancakes, first mix flour, baking powder, salt and sugar in a large bowl. In a second bowl, combine egg, buttermilk, cream cheese and melted butter. Mix the two together.
Heat a skillet to medium heat and spread with a little butter. Using a tablespoon, drop about 2 tablespoons of batter into the pan and bake for about 2-3 minutes, until the top is no longer shiny.
Turn the cream cheese pancakes and bake for another 1-2 minutes.
Preparation Tip:
Serve cream cheese pancakes still warm. Serve with whipped cream, fresh fruit, ice cream and crispy bacon!
