Instructions:

For baked brains, place calf brains in cold water for a few hours, then remove skins and any blood clots.

Then put the brains in boiling water for 3 minutes,take them out,let them cool and slice them.

Sprinkle this with salt and pepper,turn in flour,then drag through the egg,turn in breadcrumbs and press the breading a little. Fry the breaded veal brains in the clarified butter until golden brown.

Serve garnished with lemon quarters and parsley.

Preparation Tip:

Baked brains are best served with potato salad and remoulade sauce.
