Instructions:

For the almond gratin, scald the almonds, peel and grind finely. Cream the softened butter and mix in the sugar and yolks alternately, stirring constantly.

Add grated lemon zest and fold in stiff beaten egg whites with a whisk. Pour the mixture into a greased baking dish and bake at 220 °C for about 90 minutes.

To serve, turn the casserole out of the mold

Preparation Tip:

The almond casserole goes best with hot orange sauce.
