Instructions:

Carefully rinse the zucchini flowers and remove the pistil. For the batter, mix the eggs with the flour. For the filling, peel the tomatoes and cut the flesh into small cubes. Cut the mozarella cheese into small cubes, pluck the basil leaves, rinse and chop. Mix the ingredients, season with salt and freshly ground pepper.

Fill the zucchini flowers with the mozarella mixture and pull them through the batter. Heat vegetable oil and deep-fry the stuffed flowers for 3 min. on all sides until golden brown.
