For the fennel salad, mix together lemon juice, salt and pepper, olive oil, mustard, yogurt and vinegar. Clean the fennel bulbs and remove the stalk.

Slice finely or shave with a vegetable slicer. Mix the fennel slices with the salad dressing.

Serve the fennel salad with some fennel greens.

Preparation Tip:

The fennel salad will be finer if you add some sour cream or replace yogurt with sour cream at all.
