Instructions:

For the plain cupcakes, beat the sugar with the eggs until fluffy. Stir in the milk and oil and mix everything together well. Cut the vanilla bean in half, scrape out the vanilla pulp and add.

Preheat the oven to 180°C.

Mix the flour with the baking powder and stir the flour mixture into the egg mixture.

Place a muffin tray on a baking tray and line the wells with paper cups. Divide the cupcake mixture among the cups and bake in the preheated oven for about 20-25 minutes. Allow the cupcakes to cool so that the whipped topping does not melt.

For the quick topping, whip the whipped cream with the vanilla sugar and the cream stiffener until stiff. Spread on the cooled cupcake and garnish with icing beads or other edible decorations as desired.

The simple cupcakes can be varied with special spices (try the batter with a pinch of cinnamon instead of vanilla, for example) or other toppings as you like.

Preparation Tip:

Add 2 tablespoons of cocoa powder to the batter and you have simple cupcakes with a chocolaty touch.
